Easy Shrimp and Rice Bowl

If you are looking for a quick, fresh and easy meal, bowl dinners are your friend. All you need are some greens, a grain, some protein and your creative flair - enjoy!

Serves 4

Ingredients

2 tsp olive oil

sea salt, fine

1 lb shrimp (fresh or thawed), peeled and deveined, tails off

2 C brown rice, cooked

8 C baby spinach

1/2 English cucumber, thinly sliced

1/4 C parsley (remove stems, keep leaves whole) *can also substitute cilantro

2 green onions, thinly sliced

1 lime, cut into quarters

sesame seeds

low sodium soy sauce, to taste

sesame oil, to taste

Steps

Cook brown rice according to package instructions, keep warm. 

Heat a large, non-stick frying pan with olive oil.  Add shrimp and cook for ~5 min, flipping halfway until cooked through.  When cooked, shrimp should be opaque, slightly firm and pink in color. 

While shrimp is cooking, divide fresh spinach into 4 bowls. Wilt in microwave for ~1 1/5 minutes, or until spinach is soft

Slice cucumber and onions, prep parsley.

Divide cucmbers, bown rice and shrimp evenly among the 4 bowls. Garnish with parsley, green onions and sesame seeds. Squeeze 1/4 lime on each bowl.

Drizzle soy sauce and sesame oil to taste. Enjoy!

Notes

  • Brown rice - frozen brown rice is a great substitute for this recipe, some brands only take 3 minutes to cook in the microwave

  • Parsley - feel feel to substitute with cilantro

  • Sesame Oil - if you haven’t cooked with this before, it’s good to know that a little goes a long way so start with a little drizzle and taste before adding more
